How do you make giardiniera? 

Here's how to make giardiniera:

  2. In a large pot, combine vinegar, water, garlic, oregano, basil, red pepper flakes, sugar, and salt. Bring the mixture to a boil, stirring to dissolve the sugar.
  3. Add the vegetables to the pot, and reduce the heat to a simmer. Cook the vegetables for 5-10 minutes, or until they are crisp-tender.
  4. Using a slotted spoon, transfer the vegetables to a sterilized jar or container. Pour the pickling liquid over the top of the vegetables, making sure to fully cover them.
  5. Let the giardiniera cool to room temperature, and then cover and refrigerate for at least 24 hours before serving.
