How do you make vindaloo? 

Here is a simple recipe for vindaloo:

  1. In a small pan, toast mustard seeds, cumin seeds, coriander seeds, turmeric, paprika, and cayenne pepper over medium heat until fragrant, about 1-2 minutes. Let the spices cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
  2. In a large pan, heat oil over medium heat. Add the onions and cook until they are softened and lightly browned, about 5-7 minutes.
  3. Add garlic and ginger and cook for another 1-2 minutes, until fragrant.
  4. Add the ground spices and cook for another minute, until fragrant.
  5. Add pork to the pan and cook until it is browned on all sides, about 5-7 minutes.
  6. Add vinegar and water to the pan and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer until the pork is tender, about 1 hour.
  7. Season the vindaloo with salt to taste. Serve hot, garnished with fresh cilantro.
